It’s important to remember just how long your food has been sitting out before you dive in.

The Super Bowl snack spread is arguably one of the best parts about Sunday. A lot of people are heading to the store to get prepared for watch parties. It’s important to remember just how long your food has been sitting out before you dive in. “I would say an hour and a half, just to be safe and have a backup in the fridge or in the oven so you can change it out,” Chef Charles Humphrey with Morrison’s at University Health said. “So, you're not getting sick, and you're not going to go home and feel like what just happened.”He said not to eat anything perishable that’s been sitting out for more than an hour and a half – especially dairy and egg-based items. "Like your charcuterie boards, you know, maybe do small charcuterie boards, keep part in the fridge and keep part out,” he said. He said it would be a good idea to designate someone to watch the time and the food to remember how long each item has been sitting out. “That would be the safest bet, especially when you know you're getting excited, the Chiefs are winning, you're just going to forget everything,” he said. Humphrey said cold foods should be 41 degrees and below and hot food should be 135 degrees and above. He suggested Crockpots and cold packs to maintain those levels.
