Two Ingredient Bagels Weight Watchers Recipe - Run Walk Repeat (2024)


I joined Weight Watchers 6 weeks ago and have been easily following the NEW FreeStyle Program. This week, lots of talk of BAGELS in my Facebook feed, particularly easy to make TWO INGREDIENT BAGELS. Yes that is right, a bunch of“dieters” are talking about making bread. Hey Oprah isn’t the only bread lover. And not just any bread, bread so good yet so heavy in calories people are willing to scoop out the middle to enjoy and not sacrifice. Well scoop no more, enjoy ever bite of these all the rage bagels containing just two ingredients… Fat Free Greek Yogurt and Self Rising Flour.

I love Weight Watchers’ program because there is nothing you cannot eat. Tell me I can’t have something and I want it all the more. This program is about building your diet – as in how you eat as a healthy way of life not just a short time to lose weight. While the new program has over 200 healthy zero point options, once in a while a gal wants a roll or bagel – and this recipe at only 3 smart points delivers. With a standard bagel (9 to 11 points) being pretty much just about half of what I can eat daily point wise, this version is a welcome substitute and very easy to make.

There are versions of this recipe where you boil and bake, as well with a traditional bagel, but I don’t have time for that and another pot to clean out. I decided to try the variation where you just pop them in the oven. Great news, I will NOT be boiling dough anytime soon. OK, maybe when I feel like it for comparison, but my bagels turned out like everything I ever wanted. Nonfat Greek Yogurt is one of the zero point foods! BAM.

THIS blend….Is all that and more. I will now explore every option to savor it’s deliciousness.

When I saw this Everything But the Bagel Sesame Seasoning blend on a trip to Trader Joes, I knew I had to make the infamous two ingredient bagels so I picked it up and planned to make them as a celebration for weigh in day. I enjoyed every last morsel as did my daughter who immediately asked for another and my husband loved them too – and he is PICKY.Ready to make yours? This is the recipe I followed, and they turned out nearly perfect.

Two Ingredient Bagels

Makes 4 Bagels, 3 Weight Watcher Smart Points

Prep Time: 10 minutes

Cook Time: 25 minutes Total Time: 35 minutes

Ingredients:

1 cup Self Rising Flour

1 cup Fat Free Greek Yogurt – I had read fa*ge Total 0% was the best consistency wise

Optional Ingredients:

  • Egg for Egg Wash
  • Topping Everything but the Bagel Sesame Seasoning Blend
  • Poppy Seeds
  • Sesame Seeds
  • Stevia & Cinnamon

Directions:

  1. Preheat oven to 375.
  2. Combine flour and yogurt.
  3. Put a little flour your hands and turn the dough on a lightly floured surface until well blended.
  4. Knead for 1 minute to finish your dough, into a ball.
  5. Divide into four equal parts.
  6. Roll out each part into a long log, then bring the ends together and pinch to form a circle.
  7. Place on baking sheet with parchment paper.
  8. Optional Egg Wash each bagel with a pastry brush and add topping.
  9. Bake for 20-25 minutes until golden brown.
  10. Turn oven to broil and finish at broil for 2-3 minutes to get a crispy crust.
  11. Enjoy!

Calories 101, Fat 0, Saturated Fat 0, Carbohydrates 23, Sugar 0, Fiber 1, Protein 3, Smart Points 3

Voila, bagels are served.

Notes:

  • You can make your own self rising flour out of all-purpose, whole wheat or gluten-free flour by adding baking powder and salt.Mix into 1 cup flour, 1/2 teaspoon salt and 1 1/2 teaspoons baking powder. If you have self rising flour, you are good to go, no need to add anything. If you do not have self rising flour, to come out other than flat, make your own.
  • If you are using gluten-free powder, you will need to knead it for 2 minutes until it sets. Its starts out crumbly, but hang in there from reports I have seen – keep at it.
  • I turned the dough at first in the mixing bowl until it was not crumbly.
  • If you want to spread out the wealth with more bagels and save a point, you can divide into 6 parts making 6 bagels at 2 points each.
  • Why egg wash, from breadworld.com: Togive the crust a super shine: Brush it with oneeggoreggwhite beaten with a little water before you put your ready-to-gobreadin the oven. If you forget to do so before baking, you can still apply theegg wash5 minutes before thebreadis to come out of the oven.
  • This dough works for pretzels (serve with mustard or cheese sauce), pretzel bites, and pizza dough.
  • Tempted to eat them all? Cut the recipe in half and make two bagels.
  • If your dough is very sticky, add flour to your hands and the surface you are turning the dough on.
  • If your dough is crumbly you can add more yogurt, a tsp at a time. I heard in my groups, many found the fa*ge yogurt to work the best to get the dough just right.
  • This is a great base for a low point breakfast or lunch. Make your Bagel a sandwich by adding an egg and some veggies and STILL 3 points, or splurge and add some cheese too!

Boil Versus Baked Alone

From what I have seen in groups and online, if you take the time to boil first then bake, bagels will come out lighter and fluffier like traditional bagels. The bake alone method is more bread like and doughy. Mine turned out totally delicious and probably could have been in the oven a bit longer. You can experiment with oven temperatures as well if they don’t seem to be cooking to golden brown. I saw recipes ranging from 375 to 450. The broiling at the end is also optional. I think I will try to boil next time I make to see if they end up bigger and fluffier, but I am so happy with baking only – sure is easy!

Bottom Line:

This is one of those Weight Watchers GOLDEN finds, where you can enjoy and not feel deprived person. I had my bagel fresh out of oven nekid if you will, but I see a future of Egg, Bacon and veggie breakfast sandwiches, bagel pizzas, pretzel bites for the Superbowl, toasted with a bowl of soup or a cold weekend morning breakfast treat. I am loving how the FreeStyle program while limiting my daily and weekly intake, offers healthy substitutes in cooking so I do not feel like I cannot have anything. I am trying to limit my breads to one a day – some days I have more, some days no bread, so this makes a great addition to keep in the rotation. One of the benefits of Weight Watchers meeting and online groups, recipes are shared all the time. This one is so good it is spreading like wild-fire.
